The project aims to Formulate innovative edible coatings using commercial natural polysaccharides derived from microalgae and antioxidant and antimicrobial extracts obtained from wastes of the agri-food chain. The technological approach is proposed as a strategy to extend the shelf life and quality of freshly cut fruit and vegetables, using materials of biological origin and obtained from sustainable natural resources.
Researchers from the Department of Pharmacy of the University of Salerno and the Institute of Food Sciences of the National Research Council (ISA CNR) in Avellino (AV) are involved in the project.
