ACQUISITION OF BASIC KNOWLEDGE OF THE CHEMICAL-PHARMACEUTICAL PROPERTIES AND CHARACTERISTICS OF THE MAIN NUTRACEUTICAL COMPOUNDS. ACQUISITION OF KNOWLEDGE OF THE MAIN SPECTROSCOPIC TECHNIQUES RELEVANT FOR THE CHARACTERIZATION OF ACTIVE COMPONENTS IN PREPARATIONS OF NUTRACEUTICAL INTEREST. ACQUISITION OF KNOWLEDGE OF THE METHODS OF PREPARATION AND ADMINISTRATION OF NUTRACEUTICALS WHICH MAY BE USED AS ADJUVANTS IN PARTICULAR CONDITIONS AND OF THEIR MECHANISM OF ACTION. |

THE COURSE REQUIRES KNOWLEDGE OF GENERAL AND INORGANIC CHEMISTRY, HUMAN PHYSIOLOGY, AND PHARMACEUTICAL BIOLOGY AND BOTANY. IT IS THEREFORE STRONGLY RECOMMENDED THAT THE FIRST YEAR’S TEACHING OBJECTIVES HAVE BEEN ACQUIRED. |

DEFINITION AND CLASSIFICATION OF NUTRACEUTICALS: TRADITIONAL (CHEMICAL CONSTITUENTS, PROBIOTICS, NUTRACEUTICAL ENZYMES) AND NON-TRADITIONAL NUTRACEUTICALS (FORTIFIED AND RECOMBINANTS NUTRACEUTICS) (4 HOURS - 0.5 ECTS). CHEMICAL STRUCTURES, CHEMICAL-PHYSICAL PROPERTIES, BIOLOGICAL-HEALTH VALUE DEMONSTRATED WITH CLINICAL STUDIES, AND CONTENT IN FOODS OF THE MAIN NUTRACEUTICALS: FATTY ACIDS (2 HOURS - 0.25 ECTS), POLYPHENOLS (SUCH AS ANTHOCYANINS, PROANTHOCYANIDINS, STYLBENES, FLAVONOIDS, 8 HOURS - 1 ECTS), AMINO ACIDS, PEPTIDES AND PROTEINS (PLANT AND ANIMAL PROTEINS, 6 HOURS – 0.75 ECTS), PREBIOTICS (SUCH AS MALTODEXTRIN, FRUIT-OLIGOSACCHARIDES, 4 HOURS - 0.5 ECTS), COENZIN Q-10, LIPOIC ACID, GLUCOSAMINE, VEGETABLE STEROLS, MONACOLINS (4 HOURS - 0.5 ECTS). NUTRACEUTICALS: NUTRITIONAL AND HEALTHCARE CLAIMS APPROVED BY EFSA (2 HOURS - 0.25 ECTS). NUBACS CLASSIFICATION (NUTRACEUTICAL BIOAVAILABILITY CLASSIFICATION SCHEME, 4 HOURS – 0.5 ECTS): BIOACCESSIBILITY, ABSORPTION, AND TRANSFORMATION. DESIGN AND DEVELOPMENT OF A NEW NUTRACEUTICAL PRODUCT (4 HOURS - 0.5 ECTS). PRATICALS (16 HOURS - 2 ECTS) IN WHICH THE LATEST ANALYTICAL METHODS FOR CHEMICAL CHARACTERISATION AND QUALITY CONTROL OF NUTRACEUTICAL PRODUCTS (4 HOURS - 0.5 CFU) WILL BE DESCRIBED, AND METHODS FOR VALIDATION OF THESE PROCEDURES THROUGH THE USE OF HPLC AND SPECTROPHOTOMETER (4 HOURS - 0,5 CFU) WILL BE APPLIED; NUTRACEUTICALS EXTRACTION METHODS FROM PLANT MATRICES, WORK UP AND QUANTIFICATION OF NUTRACEUTICALS (4 HOURS - 0,5 CFU) WILL BE DESCRIBED, AND DETERMINATION METHODS AND QUANTIFICATION OF CASEINS IN A MILK SAMPLE (2 HOURS - 0,25 CFU) WILL BE DESCRIBED AND FOR THE ANALYSIS OF THE ACIDITY OF OIL (2 HOURS - 0.25 CFU) |
Teaching Methods | |

THE COURSE WILL INCLUDE 48 HOURS OF LESSONS (6 ECTS), COMPOSED BY 32 HOURS (4 ECTS) OF FRONTAL LESSONS WITH LECTURES AND IN-CLASS DISCUSSIONS AND 12 HOURS (2 ECTS) OF LAB EXPERIENCES. THE LECTURES WILL ALLOW THE STUDENT TO ACQUIRE KNOWLEDGE ON THE TOPIC OF NUTRACEUTICALS, AS REGARDS BOTH THE CHEMICAL-BIOLOGICAL AND THERAPEUTIC-APPLICATION ASPECTS, AS WELL AS THEIR USE IN HEALTH MANAGEMENT. PARTICIPATION IN FRONTAL TEACHING IS STRONGLY RECOMMENDED. |

THE FINAL ORAL EXAMINATION WILL CONSIST OF IN-DEPTH QUESTIONS AND DISCUSSION (20 MIN) OF THE TOPICS COVERED DURING THE COURSE. TO PASS THE EXAMINATION, THE STUDENT SHOULD OBTAIN A SCORE OF AT LEAST 18/30. |
